Baked Sweet Potato Skin with mozzarella cheese


This baked sweet potato skin with mozzarella cheese recipe is very easy to make. It only needs three ingredients, sweet potatoes, mozzarella cheese, and parsley.

It takes about 20-30 minutes to bake the sweet potatoes until the flesh is soft enough to be craved out.

The final steps includes 5 minutes to assemble and 10-15 minutes to re-bake with cheese on top. The craved out sweet potato flesh is perfect for making another dish that can be served along side the bake sweet potato skins or for later use. Two dishes with one ingredient, how brilliant is that!

Make a tons them and save the leftover for later. They reheat nicely. Great to eat as snack when they are at room temperature as well.

Baked Sweet Potato Skin with mozzarella cheese

Serves: 4-6 Cooking Time: 15 prep, 45 minutes to bake

Ingredients

  • 6 small sweet potatoes, rinsed
  • 2 Fresh mozzarella cheese, sliced into small pieces
  • Parsley, chopped
  • Salt and pepper to taste

Instructions

Heat oven 375F

Peel lengthwise each potato only once. It helps to bake the sweet potatoes faster and help to keep the potato skin firm.

Place the potatoes on a baking tray with parchment paper.

Bake for 20-30 minutes, or until the flesh is soft.

Remove the baking tray from the oven.

Let the potatoes cool off.

Meanwhile, slice mozzarella cheese into little pieces.

Chop parsley coarsely.

Place potatoes on cutting board and slice each one in half.

Scoop out most of the flesh gently and reserve the flesh in a container.

Make sure some flesh are still attached to the potato skins.

Place them back on the baking try with cut edge side up, like a boat.

Place sliced mozzarella cheese on the potato skins.

Put back in the oven for about 10-15 minutes, or until the cheese is light brown on the edges.

Remove from heat.

Season with salt and pepper

Garnish with parsley and serve.
