Shopping List

1/2 white cabbage
1/2 red cabbage
9 cups of stock, chicken, beef, or veggie will do
Coconut milk, unsweetened
1 fresh lime
1 fresh ginger, at least 3 inches long
Aleppo pepper or red chili pepper
Olive oil
1 fresh garlic
Curry power

Recipe

 

Cabbage Soup with fresh ginger, lime juice, Coconut Milk

Serves: 4-6 Cooking Time: 15 Minutes Prep, 20 Minutes Cooking

Ingredients

  • ***For white cabbage soup***
  • 1/2 white cabbage, chopped coarsely.
  • 5 cups of stock, chicken, beef, or veggie will do
  • 1/2 cup coconut milk, unsweetened
  • 3 tablespoon of lime juice
  • 1 1/2” fresh ginger, skin peeled and crushed
  • 1 tablespoon curry
  • 1/2 tablespoon chili peper
  • 1 tablespoon olive oil
  • 1 teaspoon chopped garlic
  • ***For red cabbage soup***
  • 1/2 red cabbage, chopped coarsely
  • 4 cups of stock, chicken, beef, or veggie will do
  • 1/2 cup coconut milk, unsweetened
  • 3 tablespoon of lime juice
  • 1 1/2” fresh ginger, skin peeled and crushed
  • 1/2 tablespoon chili pepper
  • 1 tablespoon olive oil
  • 1 teaspoon chopped garlic
  • No curry for red cabbage soup to keep red color vibrant
  • Salt and white pepper to taste

Instructions

***For white cabbage soup***

Heat the pan with medium heat.

Add curry power and roasted it until the aroma becomes more intense.

Add oil, garlic and ginger. Stir until garlic is soften.

Add cabbage and stir occasion until cabbage is soften.

Add coconut milk and lime juice.

When coconut milk is just boiling, add stock, one cup at a time while stirring. For thicker soup consistency, simply add less stock.

Reduce heat to medium low when the soup started to boil.

Cook for about 20 minutes or until the cabbage is soft.

Remove from heat.

Use a hand blender and puree the soup until it becomes creamy.

***For Red Cabbage Soup***

In a different pot, without adding curry power, repeat the same steps for the red cabbage soup.

Make the red cabbage soup a little thicker by adding less stock to it. This will keep the heart shape in tacked longer in the serving plate.

Notes

You can store the remaining soup in large mason jars for up to a week.
