In this lentil soup with home smoked bacon recipe, we are using French lentil, lentils du Puy. The rest of the ingredients are similar to the classic French lentil soup recipes, including the bacon we smoked ourselves.
For the bacon, instead of adding it directly to the batch, we gave it a slight twist. The smoked bacon was cut into a thick slice, pan crisped and used as the garnish. 1 medium size onion, diced
1 bunch of fennel, diced
3 medium red carrots, chopped

Lentil Soup with Home Smoked Bacon Recipe
Ingredients
1 cup French Lentil
5 cups of stocks
1 medium size onion, diced
1 bunch of fennel, diced
3 medium red carrots, chopped
5 gloves of garlic, skinned and diced
2 bay leaves
5-8 black peppercorns, crushed
1 bouquet garni
1 tsp. red wine vinegar
1 tbsp olive oil
1 slice of smoked bacon, crisped
Steps
Place stock pot over medium high heat
Add olive oil, onion and fennel. With the wooden spoon, stir until onion is soft.
Add garlic, bay leaves and stir for about 1 minute
Add carrots and lentil. Continue to stir until carrots are slight browned on the edges
Add stock and place the bouquet Garni on top. Bring the soup to boil.
Turn stove down to low heat. Cover the pot and simmer for about 40 minutes.
Garnish with crisped bacon and a long tweak of fennel tip and serve.
