Madeleines with Rosemary, Orange Zest and Rum

OK. So I was craving for something caky and sweet. Not just any sweet, but something familiar with a twist and super easy to make.

I flipped through one of my favorite cook books, Baking by James Peterson. Ah! Madeleine is calling.

Here is the classic Madeleines recipe with our own little twist. Baked in a bundt cupcake mold. Here is how they turned out. And yes, I had three in one go.

Shopping List

Dry Ingredients
3/4 cup flour
1/2 cup Turbinado sugar
1/4 teaspoon baking power
1 table spoon of orange zest
1 table spoon of chopped fresh rosemary

Wet Ingredients
1/2 cup melted butter
4 egg white
A dash of dark rum

Garnish
A dash of dark cocoa power
A dash of orange zest
Fresh rosemary tweaks

Tips & Tricks

Butter the pan will give the bake good a beautiful golden brown color. Using higher smoke point oil may not give you the same golden brown color.

Preheat oven 400F.
Butter the molds with melted butter and lightly dust flour over them.
In a bowl, sift flour and baking powder, add egg white, and combine well.
Add sugar and melted butter after the butter has cooled down.
Add chopped rosemary, orange zest and rum.
Combine well and pour in the mold with a spoon.

Bake for about 20 minutes or until Madeleines swell.

  • Dry Ingredients

Remove the madeleines from the baking mold, place them on a plate and dust with cocoa powder, sprinkle a dash of orange peel and enjoy!
