Seared Chicken Liver, Pear and Crispy Shallots

To this day, we still talk about the one time we were shopping at our local gourmet market. Robert was looking around at the butcher counter while I was hungrily (I was always hungry) lingering around the area filled with all kinds of different flavors of packaged sausages.

Robert stuck a clear container filled with fresh burgundy looking stuff in front of me and asked,

“How about some chicken liver?”

I looked at the container, hungry, and with no imagination,

“No. That doesn’t look good.”
Mind you, by the time, I could not possible cook anything edible while I was hungry.

With a smile, he continued,

“What if we get a pear, slice it and pan seared in butter. Then I thin sliced shallots, crisp them and garnish over the seared chicken liver and pear?”

Ahhhhhhhhh! Now we are talking!

“Ummmmmm! OK! let’s get some!!”

Chicken Liver with Pear and Shallots has been one of our favorite dish since. Here is a toast to my Hazardous Kitchen accomplice. Thank you for introducing this wonderful dish to our kitchen. Cheers!

 

Shopping List

16 oz fresh chicken liver
Butter or Olive Oil
1 pear, firm
1-2 shallots, depending on the size
Salt and black pepper to taste

A Spatula

Seared Chicken Liver with Pear and Crispy Shallots

Serves: 2 Cooking Time: 15

Ingredients

  • 8 oz Fresh chicken liver, carefully remove larger veins
  • Butter or Olive Oil
  • 1 pear, firm, sliced, about 1/2 inch thick
  • 1-2 shallots
  • Salt and black pepper to taste

Instructions

Heat the pan

When the pan is hot, add olive oil

When the oil is hot before it smarts to smoke, add sliced shallot.

Cook them until they are a little crispy.

Remove from heat and set a side and use as garnish later.

In the same pan, add more olive oil.

When the pan is hot, add the pear.

Lightly brown both sides of the pear.

Remove from heat and place the slices on a serving plate.

In the same pan, add a some more olive oil

When the oil is hot

Add the liver

Brown both sides of the liver, about 40 seconds for each side.

Remove the liver from heat and place it over the sliced pear.

Garnish with the crispy shallots, season with salt and pepper and serve.
